Croquembouche (or pièce monté) are created for very special occasions (including weddings) in France and other parts of Europe. They are made up of cream puffs (petite choux), traditionally filled with French pastry cream (crème patissiere) and dipped in a cooked sugar caramel, which is the "glue" holding the puffs in place on the cone-shaped tower. They may also be dipped in white or dark chocolate and filled with either pastry cream or whipped cream.
